A traditional Dosa is the Plain Dosa.

To make crispy dosas, sprinkle some water on the hot nonstick pan. Using a 2 oz laddle, pour the batter onto the hot tava or the griddle plate and is spread out evenly in circles with the base of a ladle to form a round disc. Ghee or butter or oil is sprayed on top. Once crispy turn on the other side until both sides are cooked. Dosa is served hot, either folded in half or rolled like a wrap and served with sambar or chutneys.

Another variation is the Masala Dosa which is stuffed with potato and onion masala, served with Sambar & coconut chutney. Other popular variations are the Uthappams, baked thick like a spongy pancake.
